I get that the price of eggs is shorthand for the price of all food, which has gone up, but eggs specifically have gotten so expensive that egg substitute is about the same price at this point.

Yellow pasta usually has eggs added, but eggs are not essential. As well as ignoring the eggs you can also substitute with spinach or tomatos (or squid ink or cocoa).

Only fresh pasta is made with eggs, dry pasta typically doesn't use eggs. It's semolina durum wheat and water, pushed through copper dies and then dried.
Egg....like literally everything has egg in it. Sorry I got interrupted mid post. But I'm gonna go read all the comments. Some alternative photography processes use egg whites or yolks to sub or apply a layer to the film.

I mean for real, eggs are super unnecessary for a protein rich or healthy diet. I would argue that unless you literally want to treat yourself with a sunny side up or an omelette you shouldn't be using eggs at all. I like eggs, but a dozen lasts us (family of 3) a month easily.

Oh then try falafels. Jesus I can't bring myself to make falafels or something similar at home because you literally fry it in oil and you need to do that in order for the raw legumes to be not toxic.

Tofu
I like to airfry beans and eat them as a crunchy snack.
For breakfast specifically, oatmeal isn't a bad choice.

All kinds! Butter beans turn into chewy morsels, garbanzos become crunchy little nuts, and red/black beans become a little puffy.
I'll toss them with some oil and chili lime seasoning and eat them by hand, put them on a saucy burrito or veggie wrap, crunch them up into chili, there's all sorts of ways to eat them!

Seitan is also very high in protein, containing 75g of protein per 100g compared to 13g per 100g for scrambled eggs (although its low on lysine, so it should be balanced out with other protein sources).
I haven't bought a carton of eggs since 2023 because I refuse to buy them once they're higher than $2.50 a dozen.
That's dumb. 2.50 is not a sustainable price. If you get local eggs from a humane farm, they are going to be expensive. It's just how it is man. If anything, that should cause you using them wiser.
2.39 Euro, free-range, 10 piece. Organic is 3.39, barn 1.99, all incl. 7% VAT. so 12 barn ones would be 2.40. Granted, Aldi probably makes 0 profit from the barn ones but there's only so much they can squeeze farmers. We've long since outlawed cages.
I don't know what market is like in Europe or what country specifically you're talking about. In US, small farm economics require high prices to be sustainable. Not just for eggs, but for produce and meat too. Of course you don't have to buy from them, but I do. Obviously big farms can sell it for less, but those are the one affected by bird flu.
Those "high prices for small farms" are in the order of maybe a cent or two per egg. And producing eggs isn't the whole equation: With distributed production you have lower transportation costs. Not to mention that the US has to have a whole cooling chain for eggs because they rather wash+chill them than adhere to proper hygiene standards.
It's not like European supermarket eggs would be produced in backyards. Looking at German numbers: About 50m hens in 2258 companies means an average of 22k birds per company, maximum flock size is 3000 (organic) or 4000 (regular).
The US could take its 100k flock sizes and just build some dividers and generally environmental isolation and be much more resilient. But resilience costs money so nitwit MBAs are saying "let's cut this out, statistics say I'll have my golden parachute before shit hits the fan won't someone think about quarterly results".
