have a 13600k and I played spiderman on ultra settings with 140+fps, although most of that would be because of the gpu. a 13600k(maybe even lower) is still more than enough for whatever you'll need

CPU Cooling problems: Just like 95C is normal for Ryzen, 100C is normal for Intel CPUs in many workloads. If you're worried about CPU temperatures, please look at reviews for the laptop or CPU cooler you're using.

If the need is gaming, anything above an i5 is icing on the cake. Yes, it's a little faster. But not noticeably so.
The 13700k & 14700k would probably be the strongest. Especially, if you want to overclock.
If you never want to overclock, the 13700f & 14700kf are also good options, if you want to save a little $$.
i7 should be plenty for now and years to come.
Even a 12700k would do you right.
if it's a 13th gen a 13900 if possible, simulation games like that require a lot of processing power when stuff gets crazy the more you add (especially The Sims).
If it's a 14th gen, a 14700 will do you enough.
Make sure that the GPU also has enough VRAM or you're gonna be bottlenecking your processor.

An I9 would usually be used for professionals or people who want the most performance possible. A current gen i5 will be more than enough for all of the games you listed as they're all a few years old or not very demanding. If you're looking for a desktop chip anything above the i5 13400F will be fine
None of the listed games would benefit from an i9 (or even an i7 for that matter).
i7 or even lower would be quite sufficient for this in a laptop, but I suspect i9 might be more energy efficient and thus easier to cool, but I'm judging this based on the desktop cpus, not laptop. So if the price didn't matter at all I'd consider researching the laptop i9 models, but if it matters even a little bit then i9 is a too pricy overkill.

There's not much benefit for gaming beyond the i7. So the 14700k if you have money to spend. But an i5 (13600k or 14600k) would still be more than fine. Even an i3 (13100) would be fine.
