I mean beyond eggplant, every vegetables only pizza I ever had were meh.

Mushrooms was good too with the right kind.

What are your recipes?

Full disclosure that I'm not a vegan, but I love veggies.

One of my favorite pizzas has artichoke hearts, red onion, spinach, and tomatoes. Pair it with a garlic-based vegan cream sauce, and it should be delicious.

  • Spinach (under the cheese so it doesnt burn)
  • roasted red peppers (not raw peppers)
  • raw garlic (sliced or minced)
  • green onions or chives
  • diced caramelized onions
  • beschamel sauce

A question from the uneducated: why does spinach prevent the cheese from burning?

Other way around; cheese keeps the spinach from burning, keeps it a nice texture like spinach dip

A good ole Margherita works well too. Good sauce + plant based mozzarella + basil leaves

There's also a great "white pizza" that's just olive oil, very thinly sliced potatoes with rosemary and roast garlic that's also very delicious.

Thanks; I also like the even simpler marinara; a good tomato sauce and loads of herbs.

Margarita usually with mozzarella though - edit ah never tried vegan mozza yet

This has been my go-to for a bit now for making vegan mozzarella

I add a bit of lactic acid. It's very close to the miyoko's the vegan mozzarella

My favorite pizza using typical ingredients is pepperoni, olive, spinach. I feel like too many veggies can make the pizza soggy, so I always limit the veggies to 2-3. I do like me some mushrooms and garlic as well.

Pickles and onion (and maybe a little bell pepper) with balsamic vinegar or a tangy BBQ sauce drizzled on top.

Pumpkin, thin slices raw , not too much or it won't cook. (With for example onion and pepper) . bake it hot

Probably the best pizza i ever ate was a tomato sauce base with portobello, shiitake, chanterelle and truffle oil. That was crazy good!

Red Pepper + Onion + Minced Garlic has been my favorite veggie pizza for decades now. The sweeter the onion the better.

Green Pepper + Onion is a great fallback if red pepper isn't available but you'll want to go with garlic cloves instead of minced.

My mom always liked artichoke on pizza.

I like the OG supreme veggies: onion, bell pepper, mushrooms, tomato, and olives. But I also liked this pineapple+caramelized pickled jalapeno pizza I tried at a local brewery restaurant.

It's pizza, though. You could pretty much use whatever you want and it wouldn't be bad. 🤷🏻‍♂️

Mashed potatoes. Pre cook and scoop out little dollops. The top will crisp up a bit when baked and it's so good

Hmmm how do you season this? Also I suppose tomato base, but I've never been a fan of this combination in other recipes

Tomato base, chickpeas, and spinach. Or, if it doesn't have to be veggies all the way, some plant based tuna and green peas.

I never really considered potatoes, but I could see potatoes and loads of onions, all precooked and then let it color in the oven. Some black olives for the contrast. Thanks

On a red pie I always do broccoli, red onions, olives, mushrooms, tomatoes, and peppers. Plus sometimes spinach. The key is for these to all be fresh, not canned or frozen. Plus artichoke hearts would be good too (canned & marinated are fine).

You can add wallnuts to your pizza to increate proteins/fats amount. A popular combo for the season would be pumpkin and wallnuts.
