Local will just show content from the instance you're logged into. In your case it's lemmy.world. All means content from world and instances federated with world. All is everything, but all of lemmy is still tiny compared to reddit so it just doesn't move that fast. I usually sort by active and that keeps things fresh. "Active last x hours" also works nicely.

That would probably depend on the instance creators. Donations are paying the way so far, but maybe someone will test out an instance with a registration fee or something. I don't see that working out unless every other instance is in dire straits and super unstable because they're running out of money.
We'll need a critical mass of well distributed nerds to make this happen.
