Basic economics and understanding that reducing demand reduces prices is... not US citizens strong suit.
Instead we have seniors driving in circles around town wasting gas looking for cheap eggs. It's fucking insanity.
I never ate many eggs to begin with, so the whole god damned thing blows my fucking mind. It was not hard to be like "welp, not buying those anymore.*
It's a chicken and egg problem here. You're saying that prices never fall because people don't lower demand, but I would instead argue that Americans don't seem to understand that reduced demand lowers prices simply because we have literally never once seen that actually happen in practice due to corporate greed.
I would say that's only really become the norm in the last 15-20 years at most. That's when giant corporations had fully gobbled up smaller companies and have such large warchests of money that they moved from "we're selling less, we need to drop prices to unload product" to "we're selling less, we need to raise prices to increase profits on the small amount we actually sell." That was what famously recently motivated McDonald's to raise prices, they were actually aiming at chasing fewer customers with higher prices to offset the lost sales.
So, I'd say in the modern era of giant consolidated food corporations, and giant consolidated corporations in general, sadly, you're correct.
Amen. Haven't cooked eggs in several years. I like them, but I definitely don't need them. We Americans are so fucking spoiled all the time.
I hope it doesn't come to it, but maybe a Great Depression 2 will teach us to resist the call of instant gratification for once in our lives.

We tried a vegan baking recipe that used ground flax seeds instead of eggs
I can’t remember how it worked out, but now I have flax seeds in my breakfast daily and have been enjoying that.
Vegan recipes use some pretty neat ingredients.
I had some dumbass going off about how they needed eggs for brioche because there aren't good egg substitutes for brioche... Like could you get any more dense, it's literally a "let them eat cake" ("Qu'ils mangent de la brioche") moment. Nobody fucking needs brioche.

not really sure the analogy fits directly, in this case people are mad that the brioche is expensive and I'm saying "why not eat bread"
Valid way to read it, but I meant more in the sense that Antoinette didn't need brioche herself, and the extravagance she was used to was a big part of why peasants couldn't afford basic bread. The extravagance of some stupid Americans thinking they need things like brioche is making it so poor Americans can't afford eggs.
People are underestimating the importance of eggs. While it's okay to go without needing to eat them on their own, they are usually essential for numerous baking recipes and other recipes in general. Like okay good for you that you don't need them or anything because there's other and better foods out there that can provide protein. Feels like every comment section where eggs is the topic, there's always a bunch of virtue signaling people or people lecturing others that they don't need it and go to their lifestyle anyways.
Eggs are super easy to replace in any recipe
I haven't tried them with a cheesecake, but kroger has powdered egg substitutes that cost $6 a bag and are the equivalent of about 50 eggs for something like brownies, cakes, cookies, and bread. No one has ever noticed a difference when i bake using it.
