Interesting, but it's not clear how controller input is achieved. No one is using the keyboard. Perhaps a bluetooth joystick?

It's one of the standard demos that runs every time you boot the game.

They probably don’t need to move beyond menu because if you leave it running long enough a demo begins automatically. In-game credits at the end suggest that it’s a demo but I haven’t played Doom in ages.

Are you joking? Doom was built for a keyboard and mouse and most people believe it’s the superior way to play FPS games. Although I’m not sure how any controller interfaces with a dongle.
