@allthingsfoodandcooking My homemade fermented chilli sauce is causing my throat to feel sore
Like it feels like having a throat irritated by havinf an infection. It doesn't happen when i eat other, even spicier (carolina reaper) sauces from the store. Is it too acidic?

As fermentation involves microorganisms it's possible you got a species that produces something unexpected.

Any chance you're mildly allergic to one of the ingredients?

@allthingsfoodandcooking @sin_free_for_00_days Never really considered that. It's just chilli pepper, garlic and salt and i've never experienced any allergic reaction to neither of those. That's why my only guess is the acidity affecting the mucous membrane (since the feeling is similar like with contracting the sore throat) in a way the hot sauce from the shop shelf doesn't.
