It's not an anime, per se, but the writing, voice acting and such are very much like an anime in the Like a Dragon series of games. Where it currently sits, all the characters are middle-aged or older. It also has a lot of existential dialogue and side stories that are extremely poignant, as someone who is also middle-aged in this time period.
The only actual anime I could even think of with main characters my age or older that I also enjoy is Cowboy Bebop; and that's about 50-50 because of Faye and Edward. I've seen some episodes of Bartender but I wouldn't go so far as to say I enjoy it yet. It's a bit dry.
What you want is "seinen" anime, which is intended for an older audience. Most anime is "shonen", which is intended for kids. (Not that there's anything wrong with an adult enjoying shonen.) There are more genres and specifications, but I am not that into anime.
Dragonball is shonen. Cowboy Bebop is seinen. There are loads of great seinen shows out there.
"Spice and Wolf". It's a great story with adult characters. MC is like 26 years old and the themes in this show are also for mature audience. There is a series from 2008 but they also made a remake that is currently airing. As a fan of original series I'm enjoying it very much.
Fullmetal Alchemist (both of them). The two main characters are basically the only teenagers, and only one of them looks it.
Brilliant series, but the main characters are children. That kinda goes completely against the request of the OP.

I mean, I don't remember watching an anime that has a character like that, but IDK some people are really weird about that.

I don't care how old the character is canonically. If they look and act like a child, they should be treated as one. Simple as that.

Fair enough. I'm just tired of the excuse that the reader/watcher is supposed to believe that the very obvious child is supposed to be hundreds or even thousands of years old and that somehow magically makes it not weird or creepy to view this character sexually.
I love manga and anime myself, but I just feel like this kind of shit makes everyone that enjoys this form of Japanese media look bad.

That is an actual person that is in their 20s or 30s, regardless of being blessed with youthful looks. Not a fictional character that is purposely designed to look like a child for no good reason other than getting lolicon fans interested.
Is it ok to have preference for blondes or redheads or tall or slim? I think most people will agree it's ok. Now, do you consider it ok to have preference (including sexual attraction) for youthful looks, in case it's limited to people who are actually adult?
Actual, real adults? People capable of consent and making their own choices? Absolutely. Doesn't change my opinion on fictional characters that are made to look like children when making them look older has absolutely no effect on the story.

In anime people also care about visuals, not only the story. Making certain characters have youthful looks is done to appeal to people who have preference for youthful looks, sometimes including sexual preference, and you also seem to agree it's absolutely legitimate preference to have in case it's limited to actual adults. The visual difference between "looking like children" and "having youthful looks" can be quite a subjective one, and that's where everyone draws the line for themselves.

I don't really remember any examples of hundreds year old loli vampires that actually act like kids. Shinobu certainly isn't one. I didn't include anything like this because OP specifically asks for adult appearances though.
I can't argue this point or agree with it. I honestly haven't read or watched enough media with characters like this because it's not my thing.
I just added that because it fit the earlier duck metaphor. And I'm willing to bet money there are actual characters like that as well.
