Genuine question, is the poached egg the thing on top of the toast and asparagus?

I’m just not sure why it appears toasted?

I believe that thing over the corner of the toast and asparagus is the center of the toast. Think the center of the toast was hollowed out and they put the egg inside the toast.

Mackwell got it right, the center of the toast is cut out and the egg is under the microgreens. It was seriously the best egg and toast I've ever had.
