Why would this not be legal in EU if the conditions of using the copilot are clearly stated in the agreement? GDPR etc is mostly just that: requirement for clear language + informed consent.

I indeed do not want to store it all on the phone. It's more like a temporary folder on the phone, just to upload it to the jellyfin

Depends on numbers of simultaneous streaming capability you need i think. I recently bought a 50 € used esprimo "office computer" and it runs very well. I put a 50 € 1TB nvme SSD+ ~200 € 4TB external ssd and a 30 € wifi pci card and good to go, +- 330 € total... Used an old 1TB HDD i still had for back-up. It wouldn't suffice for dozens of simultaneous streams with transcoding, but it runs my <5 users jellyfin+deluge+nextcloud very well.
If RAM upgradable to dual channel it could still make a big difference

That's just not true, there was for example already standardised mini-usb at the time of the ipod.
They have a long history of overpriced proprietary cables and connectors ... Are you disputing it? The ipod 1 is a valid example and there were plenty other examples afterwards... They lock you in. Apple is a prison, or walled garden if you prefer that term.
"Vendor lock-in" is the backbone philosophy for the entire company and literally every single product and service it has ever created.
I had a very similar experience with the ipod and avoid everything apple ever since.
ITunes did install on my windows laptop (wondering why i had to do that tho, why couldn't i just drag my mp3's to the device folder??), but it was still an instant locked-in experience. Whatever went into iTunes/ipod seemed near impossible to get back out. Mp3 in, gibberish out. Encoded to some apple (c) tm format, lost into the void. Coming from a normal mp3-player that was very unexpected and unpleasant.
The only thing I liked about it was the (hardware) wheel.
In my experience a very large % of delayed trains are "people on the tracks", either people acting stupid or suicide attempts.
