The same reason people reread books, rewatch movies/tv shows or go back to a nice restaurant/bar they've been to before:

You enjoyed it once so you go back to enjoy it a second time.

Seems like a you problem. Just click "read more" on the Steam store page and it will drop down and show you all the content of the different versions.

The original Prey 2 they showed off ages ago where you were a bounty hunter on a giant space station. Was really looking forward to that before Bethesda canned it.
