You should check out 20 Minutes Till Dawn. It's a better looking version of vampire survivor.
I really liked Zero Sievert. An extraction shooter with some nice missions. Also Wall World.
Everhood for a good pixel game, but it's not really comparable to much other than a weird acid trip. The Steam reviews are a good indicator for the vibes and a good laugh.
To the moon and APICO come to mind :D

Cave Story is always a fun time.
It only shares the roguelite elements with vampire survivors, but I'll drop a recommend for The Dungeon Beneath here. Super simple but pretty addicting.
It's still in early access, but Traveller's Rest is very relaxing and chill.
I like Rimworld, trying to survive and build a functional lil town while keeping everyone alive. Eventually expanding enough to build a spaceship and escape the planet to win the game. I never have though I just put on lowest difficulty and watch my lil kitty people doodl about.
While it has simple graphics, Rimworld is not a pixel game. It is a great game, though!
Any of the Final Fantasy pixel remaster would be my answer. They are not like the newer remakes, they hold true to the originals with a face-lift.
Funny how no one mentioned the Quest for Glory or any of those old Sierra point and click adventure games. Oh, and those games from LucasArts as well.
On more modern one I think Dead Cells executed pretty well, since my eyes don't feel tired after play compare to other more action driven pixel art games.
King's Quest V for me. I love Sierra games.
Yeah, their pixel art/animation is the benchmark for the industry.

Also binding of Isaac is great and good for a couple hundred hours of play.

It was my life for over a decade. Since I was kid, I loved going on there and chatting with people all around the world. Meeting new friends, questing.
The game was really hard and had a steep learning curve. No max level. It made you work as a team as a requirement and I loved it.
It’s not pixelated but if you like Vampire Survivors you should totally check out Brotato!
Oneshot is great! It's a very beautiful game.
Knytt Stories. It's a free game with downloadable levels, and you can make your own as well with the built-in level designer. It's a really chill platformer.
Dunno if it counts as "pixel" per SE as it's mor artistic but stardewvalley valley fs. Other than that terraria or celeste
I'm sure there's more if I sit and think for longer, but right now I'd have to say Blasphemous - I went into it completely blind to what it was, and ho boy did it blow me away. Everything just felt good about that game.
Gurk and Gurk II on Android are fun 8bit swords and sorcery...
