Ok, so I've nailed yeast down to Instaferm, which is made by a company out of Montreal. The problem is, I can't really find it locally (Durham Region, Ontario)!

Our Metro says "out of stock", and all other places are online.

Are there any known retailers of this stuff? It's frustrating that stores like Sobeys don't have online ordering so you can at least see what they carry.

I live very close to Foodbasics, Nofrills, RCSS, Freshco, Metro, Sobeys... and of course, American stores like Walmart, which I'm sooooooo over by now. LOL

You could just grow your own with instructions on how to make sourdough starter.

Notes:

  • it says unbleached, but you can use bleached flour with mashed up unwashed seed-less grapes the first day to start.
  • boil the jar/lid and water you use to sterilize first . Let cool until you can easily handle with your bare hands or it will kill the yeast.
  • it will take a week+ of daily feedings for it to be ideal starter. Once you have a healthy batch you can store it in the fridge and refeed it weekly/every time you use it.

My parents make this starter. Because I use a bread machine for bread and pizza dough, I'm OK sticking to off-the-shelf yeast to keep things simple and consistent, but I appreciate that another option exits! I may experiment with sourdough starter when I've got more time, though.

I've never tried it but almost did during Covid: you can use brewers yeast if you get desperate and I believe there are quite a few Canadian suppliers for that.

I use yeast all the time (daily), so I'd rather look for a long-term solution.

I think I may need to simply order it online (from a Canadian supplier) and deal with the fact that I'll be paying shipping. I usually sock up and freeze it, so it would be a "bulk" order.

Nice! I also found a place in Whitby, and I may visit them on the weekend since they're closer. 😁

I'm not in Ontario but it's in superstore here (Loblaws) in the Maritimes. Usually it's the choice of GFS as well if you know anyone who owns a restaurant.

Yeah, I'm almost certain I purchase it from Superstore years ago, but since I've stopped shopping there (also years ago!), I can only go by what their website lists, and they only show other brands.
