So, did they carve out the peel a little bit then stick it to the bottom of the glass like a suction cup? That part wasn't super clear to me.
I'm thinking that the citrus pith, light colored semi-fluffy part of a peel, is filled with more air than the outer peel, so by carving out a hollow in the pith, it makes the piece of lime peel denser overall and able to sink to the bottom.
Edit: Then it would also take some dexterity to make sure the peel lands pith side down when dropping it into the martini glass.
