Signal is better than telegram but just a little bit. Honestly people should be using Signal if anything as it is better than many other popular platforms like WhatsApp and regular SMS.
Signal is centralized. I don't like it.

It does, but it's in a very malicious fashion. You need to activate something called "Secret Chat" for a given chat conversation. Only then is it E2EE. Otherwise, it's unencrypted like discord n stuff.
I don't trust telegram because they have closed servers.

I just want the telegram to not have access to the photo. Otherwise, I would use other methods to transmit it.
Theoretically, they donβt have access to the photos even though theyβre running the server between. Thatβs what end to end encryption means, itβs encrypted on your end and decrypted on the recipients end.
Unless the middle man in question retains both your and the recipients encryption keys, they canβt read the messages. This requires trusting the vendor in question.
However the only alternative to trusting a vendor is not only purchasing your own equipment, but also deploying it on your property, and building and maintaining your own isolated physical connections between those locations. This is what nation states and militaries do, the US military has an entirely physically separate and independent βinternetβ.
Thereβs a concept in information security not to spend more protecting information than that information is worth. Your gifs are probably not worth the effort of building your own infrastructure, unless youβre sending some highly sketchy content.
I'm going to come off as retarded but I have to ask: when did Signal get this bad rep? I remember not too long ago that it and Telegram were praised for their privacy practices. What happened for that to change?

You can 7-zip it with a password. That's pretty simple to do and use - you only need an archiving program that supports it and can send that file and share the password.
That's not secure at all. For instance Microsoft will brute force the password for all of your zips to check for malware. It takes all of a few minutes to brute force zip encryption
Note that I said 7-zip, not zip. Are you making that claim for 7-zip?
Do you have a source for the brute forcing? Because I'm interested. If it's actually being done I doubt it'd go beyond predefined common password lists or exploiting non-secure passwording.

You could share a link to the image if you hosted a drive or photo sharing service yourself. Otherwise, I guess there's Signal or telegram secret chats.

I have used SimpleX Chat for a few months and the following made me switch to XMPP:
- It literally drains my battery on my Google Pixel 6a with GrapheneOS. I had to charge my phone 1 time per day. Before and now after, I only need charge my phone 1 per 2 days.
- It is "impossible" for me to connect SimpleX Chat on Linux. Haven't tried on Windows because I don't use that shit due to privacy reasons.
- If you're in a voice call and goes back from the call to send something in the chat (like a picture), the call will end. You are not allowed to use the chat while you're in a call in SimpleX Chat.
Simplex chat is good for group chats. The battery life is fine as long as you switch it to periodically check for incoming messages. Calls will break but they are already completely unstable so its not a big deal.

True regarding the battery life. I did find the calls to be working really well.
My replacement? I installed Snikket on my server. And if the calls doesn't work (haven't tried it yet), I might use MiroTalk for that.

simplex is a relatively new chat app but it's evolving pretty fast, i suggest it too, but it has several bug and missing feature that need to be fixed and added in order to make it like a standard chat application

I've never gotten a successful call so count yourself lucky. Honestly Simplex chat is to centralized but for now its a stable alternative to signal.
it's not centralized, you can choose your smp, xftp and webrtc ice servers, or you can install them in your own server
so is a decentralized chat application
so far i was able to do calls and videocalls to everyone (i have 8 friends there), but i won't say that the calls are stable, the application needs time to stabilize, and that's what they are doing, you can check the the GitHub page or chat with the developer if you want to know more
