OBS was going to be my answer as well. There's tons of videos on YouTube or a quick Google search that'll explain the best settings to use depending on what output you're looking for.
I've used OBS for years and can say I've very rarely had any issues with it.
When I use OBS, my records usually just show a black screen. I had better luck with Audials but it took some playing with the settings. Is there a setting on OBS that allows for the content to actually show up?
I am not sure what issue you are experiencing, cause it works exactly as you say for me
Hardware acceleration is probably the cause. If you turn that off, it will probably fix that issue.
What about ShareX?
I've never heard of this one. Is it any good?
I've only used it for screenshots and gifs so far. Works pretty well, and you can easily upload it to image hosting sites like imgur within the program.
If you search for record video sharex you can also find guides on how to record audio with it.
I use OBS studio. Probably overkill for grabbing convert vids to rewatch later but it works! Then load into a plex server.
