random question, what is that chicken thing called? And can that doughy exterior somehow be recreated at home, ideally without several liters of oil??

Nah sweet and sour chicken isn't necessarily battered, it's just the sauce
Yes, I'm aware, but that is also what the dish is called at most American Chinese takeout restaurants. Yes, you may have to add "+battered" to your "sweet and sour chicken" websearch, but I promise you doing so will absolutely get you to recipes for this dish.
i believe you cook some rice, fry some battered chicken bits, and pour some sweet&sour sauce into a small bowl
I've tried in an air fryer before, it wasn't awesome. Definitely edible, but the dough never plumped up or whatever it's called
I've had a local place literally call them Chicken Balls.
