Migas! It's a TexMex egg dish.

Beat eggs with salt, pepper, and cumin. Let them stand for 10 minutes, then dice a jalapeno and an equal amount of onion. Fry them for a couple of minutes, then add minced garlic. When the garlic is just fragrant, beat the eggs back to foaminess, then add to the pan. Let them set for about 45 seconds, then add a big dollop of salsa and mix. When the eggs are almost done to your liking, add a handful of cheese (I like cheddar or Oaxaca), and crumble in a handful of tortilla chips, the more stale the better. Let everything sit covered for a minute or two, then serve!

I like mine with extra jalapeno, and if I'm feeling saucy I add chorizo.
