Sure! Here's a simple recipe for classic vanilla cupcakes:

Ingredients:

  • 1 1/2 cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (120ml) milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.

  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.

  3. Cream Butter and Sugar: In a large bowl, beat the softened butter and sugar together until light and fluffy.

  4. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.

  5. Combine Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.

  6. Fill Cupcake Liners: Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

  7. Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool: Allow cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before frosting.

Optional Frosting:

  • 1/2 cup (115g) unsalted butter, softened
  • 2 cups (250g) powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions: Beat the butter until creamy. Gradually add powdered sugar, milk, and vanilla extract, beating until smooth and fluffy.

Enjoy your homemade cupcakes!
