I wouldn't want to spend my life with someone, who would not be capable of understanding the things I like thinking and talking about, so a lot less intelligent partnet would be a problem. I would also not want to feel like I have nothing to offer intellectually to my partner, so the ideal is to be in the same league. I can theoretically imagine some kind of combination of one partner being less intelligent but also outstanding in another department that the other partner is lacking.

I don't think this is how dating works. What you describe is just looking for a quick sexual partner, for which prostitution can be more suitable. Dating is about relationships not just about sex, right? You won't get that by taking a number from a random girl in a bar. The easiest way for dating is to make friends first, a nice friend group or two with both men and women, based on shared interests, compatible personalities... Friend groups allow for meeting more people of your kind (friends of friends) and create a prefiltered pool of people where it's much easier to find a partner for a serious relationship. Quite different from prostitution.

You don't need to avoid all carbs. Try to chose those that don't absorb so quickly. Whole grain products are better for this reason (appart from the obvious fiber content). Also starch in rice or wholegrain pasta is better than regular sugar, because it takes the body more time and energy to break down.
I'd argue that gambling doesn't really have good sides and alcohol is ambivalent at best. We could compare it to other media like TV, that's perdectly ok. But when it comes to restrictions concerning other media, they are not as strict and act mostly like guidelines for parents.
