Currently using a combination of Plex, Retroarch and Komga. Plex for videos and it can work for music. Retroarch for all video games, even DOS, Windows 3.1 and Windows 95. Then Komga for cbz/PDF and soon epub. Kavita is another option for documents that is very similar and much more light-weight, especially if your libraries are big.
There's not much else that doesn't cover. You could use launchbox if you want more general software. There's much better options than Plex for music.
It's probably going to be hard to get something that covers everything and any kind of robust features.
