As a line cook, cutting up everything before a pan gets turned on is just good mise en place. You shouldn't start cooking until you know you're ready and haven't forgotten anything. The whole process is way easier and more relaxed when you've got all the components together in advance

I personally fell in love with it after re-examining my life and what I wanted out of it after finishing cancer treatment. Even though it's my passion I absolutely don't want to stay in the kitchen past 35 or so. I don't want to be giving 70 hours of my life each week to work indefinitely and I don't think my body will be able to handle it much after that.

 

Basically what the title says, what made you choose the culinary/food service industry? Why is this what you chose to do?

I went to school for a job that I worked 70 hrs a week at and still never got past $52k a year in the North Jersey/NY area. I just want to make enough to make ends meet and have a little leftover in savings, I don't even need it to be to the extent of the meme

 

This industry is brutal. I'm tearing my body apart for $16 an hour just continuously reminding myself that I'm learning a lot and this isn't forever, but man is it kicking my ass. What do you all do to unwind? Is booze/weed really all there is to help you chill out at the end of the day?
