You need to talk to a professional (e.g. A therapist familiar with bipolar). This would be complicated even if you didn't have the added complication of the bipolar mania.

But if you won't do that, here's a TL;DR.

You do not know this person. A lifetime has passed since you knew them. You are painting a rosier picture of the past than necessarily existed. Do not throw away what you have for a fantasy.

It tastes like gasoline, but it surprisingly has some value in cocktails. "The Alderman" cocktail bar in Pilsen does a fascinating "grapefruit" cocktail that doesn't have grapefruit, but rather uses malort to replicate the grapefruit bitterness.

Hey, welcome to the hobby! Take it slow and be kind to yourself, everyone makes mistakes.

Think about smoking as these steps.

  1. Prep meat (trim fat, remove silverskin, etc). Lots of great tutorials on YouTube for each cut of meat.

  2. Season meat (brines, marinades, rubs, etc)

  3. Smoke meat (keep smoker at consistent temp until meat reaches the desired internal temp).

The specifics will change based on the cut of meat you're using, but the above steps apply to everything.

I'd pick a forgiving and shorter cook time meat and look up recipes (basically the recipe is for the rub/brine). My favorite dead simple and crowd favorite cut is pork belly.

Depends on what you prioritize. I think most of the folks I know settled in the Wicker Park or Logan square neighborhoods. If you share some more info about what you like to do / what's important to you in a neighborhood, we can give more specific advice.
