Grilled stuffed peppers. Italian sausage, onions, diced tomatoes, mozzarella, with a yogurt sauce

 

Fiance has a cold so it soup time. Lemon chicken orzo.

 

Chicken Po Boy. Cajun seasoned baked chicken, lettuce, tomato, remoulade sauce, on French bread

Romaine heart split in 2, tomato, croutons, bacon, parm, salsa ranch dressing. With a little fresh mixed fruit salad on the side, apple, strawberry, blueberries.

 

Quick breakfast tacos. Fried eggs, hash brown sticks, sausage, sauteed jalapenos

 

Felt like making a little taste of Texas at home. Next time a little egg wash on top to get them a nice golden brown. Recipe I had called for just a butter on top and that didn't do the trick. Over very happy with how these turned out.

 

Our Midwestern supper. Chicken meatloaf, cottage cheese, toasted brussel sprouts. I have to watch how much beef I eat but this definitely scratches that itch.

Wow after about a year and a half from Storm Front to Battle Ground I feel like I have been on a journey. The growth of the characters and expansion of the world really feels like we have come a long way. The loss of Murphy is going to hurt in the next few books as I am sure Harry will take a long time to get over that if he even can. I'm not sure what is next but I am hear for it.

100% it is such a flavorful and fairly easy dish. Really checks all the boxes for me.

So I loosely followed a couple recipes and combined them. One had the meat and veggies simmer in vegetable stock until it was just about gone and than add a little corn starch slurry to thicken it up and than I added maybe a 1/4 cup of heavy cream.

Slaw goes on cold. At least that's how we always do it. Adds nice contrast.

They did get a touch more done than I was hoping but not burnt. Even the center of the yoke still had a little liquid to it.

It was perfect. Nice and crispy snap. Did a vid on scratching the sugar but it didn't save.
