Thinking of getting new RAM for i7-10700k currently I have HyperX Predator 2x8 3200MHz. And I'm thinking of getting 2x16 kit for coding/virtual machines, gaming although I'm not sure which speed should I get, my motherboard is ASUS Z-490PLUS and it supports up to 4600MHz. Although, I've read some posts and some suggest getting 3600MHz or is it better to get faster RAM like 4000/4400/4600 to future-proof my PC?

Just stick with the 3200mhz just make sure it cl16 or faster, you won’t see a noticeable difference performance wise.

I would personally wouldn't go over 3600. You could even just stick with 3200, its still fast, and really cheap right now.

Based on these results some are at 2x16 4400

That does not guarantee you are going to get 4400 problem free, I suggest going max 4000-4266.

If you click those results in the list, you will see many who achieved over 4400 are using just 2x8 kits, 2x16 or 4x8 does not go quite as high.

If you wanna maximize your RAM, you can get a 4x32GB Non-ECC DDR4 2933MHz

or you can just go for 2x16GB Non-ECC DDR4 4600MHz and try overclocking it to 5866MHz as it's 10700k max bandwidth it'll be able to handle.
