Hello! So I saw that skyrim is discounted on gog right now and I was wondering if the anniversary edition on gog would be good for modding. I read somewhere that the gog version isn't compatible with dll SKSE mods. Is it worth getting on gog or should I wait for steam to discount it?

Go for Steam. As you said, some mods/dlls aren't compatible with GOG and if you ever want to deal with modlists, plenty require you to have the Steam version. Someone more savvy than myself would need to explain the technical details of why (I'm assuming something to do with DRM checks).

Ok but should I go with SE or AE?

That just depends on if you want the creation club content that AE gives you. The latest patch for SE includes four free AE mods. That's the only real difference, but shouldn't effect your modding experience too much. I personally use SE.
