Legally it's a melt. Bits of face in aspic isn't cheese, no matter what you call it. But there aren't any sidebar rules so sure! Grill that face cheese. Is it delicious?

Definitely a melt but it sounds good. I've never had or hear of hog head cheese but it sounds tasty.
