Jellyfin is also a fork of Emby so there's some continuity there for OP
What devices are you watching on? Are you sharing the server with novice people? or its just you?
For me my setup consist of two servers, I run a jellyfin server for me because its much better to watch on the browser, and I have MPV Shim on my pc, and in my living room I use Infuse so it doesn't matter which server I use.
But I noticed that family members were annoyed trying to set everything up on their end because its no as seamless as plex, so I just installed a plex server on top of that where I share it with others.

I believe these two, with emby which I really hate, are your only option.
Install Sonarr, Radarr, Prowlarr, Overseerr and you're good to go, IBRACORP has good guides on how to install and configure these apps.
It might sound "too much of a hassle" at first, but if you want an easy to maintain and configurable setup, I'd suggest going through with this route.
Btw there's an other easier choice, which ppl usually downvote me for saying, and go with a "managed seedbox". The idea is they provide you with the seedbox, aka a shared VPS, and an easy control panel to install, update, and repair apps such as the ones I mentioned. You download all of your stuff and store them in that seedbox and directly stream from it without worrying about affecting your home bandwidth.
I usually suggest Ultraseedbox for first timers, their prices start at $16/month for 3TB storage (don't go with the cheaper plans they don't support plex), and their support are helpful compared to other providers.
If I used Ultraseedbox and got a server in the Netherlands, would I still need a VPN?
Afaik the answer is No. But it would be better to get the answer from someone who lives in a country where their laws are more strict than mine because in here no one cares if I torrent with or without a VPN

I really enjoy having Plex as my media server. It’s about the same amount of hassle as Emby, and there’s also Jellyfin which I haven’t dabbled into yet.
I think most comments are missing the fact that you were using someone else's Emby server and might not want to set up your own.
If that's the case, you could look into a movie-web instance like https://sudo-flix.lol/. Check out the list of instances.
