1st Build: 7800x3D, A4 H20, Highest Performing Build For Plane Carry-On. Am I Delusional?

My goals are a build that caters to all my hobbies:
- (Priority) gaming at 1440p with high FPS (144+) and 4k for chill games (Elden Ring)
- video encoding
- Stable Diffusion
I travel back and forth btw Canada and the EU every 3 months so air travel is important. I've lasted with a Dell XPS 9370 + GTX1070 external GPU for 6 years and I'm tired of it.
My proposed build
System specs
- Case: Dan A4 H20
- CPU: AMD Ryzen 7 7800X3D
- MOBO: ASUS ROG Strix B650E-I
- RAM: CORSAIR Vengeance DDR5 RAM 64GB (2x32GB) 6000MHz CL30 AMD Expo
- GPU: TBD but likely RTX 4070 Ti Super (will find out what I get in a few days). Would prefer 4090 FE but can't find it in Canada at a reasonable price. 16GB is my minimum for stable diffusion tinkering
- COOLER:
- AIO: DeepCool LS520 SE Liquid Cooler 240mm 4th Gen OR
- I hate the RGB, but it seemed the most affordable AIO that I found that fits Dan A4 H20
- Air Cooler: Thermalright AXP90-X53 Full Copper Low Profile CPU Cooler
- I get this would imply I need additional case fans where the AIO would have been
- AIO: DeepCool LS520 SE Liquid Cooler 240mm 4th Gen OR
- PSU: Corsair SFX 750
- SSD: Western Digital SN850X NVMe M.2 2280 2TB PCI-Express 4.0 x 2
Questions/Concerns:
- Travelling with AIO in carry-on. Everyone thinks probably ok, but airport security is an unknown, so I would have to disassemble the AIO from the build and put it in checked luggage each time I travel. Maybe I'm making a bigger deal than it is to disassemble and reassemble, and I should just accept that option. I have emailed DeepCool to see the quantity of liquid in the AIO to see if it comes under the 100ml allowance, but even if it does, it would be a risk.
- Going with air cooling and using the AXP90-X53 Full Copper. It seems it could be viable, but because its relatively new and not many people have it - there aren't a lot of tests with the 7800x3D. I know the Full Black (which is also full copper) has been around for a while, it also doesn't have a lot of tests. I see people testing with the AXP90-X47 Full Copper, but it is probably not good enough for the 7800x3D without tinkering with voltage.
- Is there a smaller case or equivalent size that would be better for air cooling? I've been looking at the S300 KXRORS: My intuition says no because there is even less room.
- For air-travel, I've started reading people also remove their GPU because vibrations in the plane cause issues with hardware. I'd be treating this build like a newboard baby (that I slide under the seat in front of me).
I would appreciate any insight or advice you can give. Or, alternatively, feel free to roast me about how my proposed buid will roast my CPU.
