For YouTube, use FreeTube, Tubular or LibreTube if you like native clients or Piped and Invidious if you prefer a website.
It's best not to use Reddit at all, but if you need it for some reason, check out Libreddit or this site
Unfortunately not much can be done to avoid Discord's terrible UI other than not using it. The Matrix protocol and Element client are pretty nice alternatives.
Piped and Invidious, I have tried dozens of servers of them. They just don't work if I want to watch at 1080p. I have not tried the others though.

iv.datura.network and invidious.fi have always worked for me, even at 1080p
Discord is easy, I just it for voice chat with friends exclusively. The rest of discord is what you get when you explain forums to someone, bash them over the head 1000 times, then let them program a forum. I could not think of a single thing they could make even worse.
A third party app that's still working for me for Reddit is called Stealth.
I tried it a few months ago and it was broken, I might give it another shot
Try RedReader. It still works for Reddit(they gave it an exception for accessibility reasons). It is available on F Droid as well.
I heard about it, but I'm totally fine with using Libreddit. I never log in to Reddit and I only need to periodically check 2 subreddits, Libreddit is totally fine for that.
