Sihkism isn't all that widely known in Denmark and the only Gurdwara that I know of seem to have had security issues, their fence have been cut a few places.
I see a few turban-wearing sihks in my everyday life, but it really isn't many and I've never seen them outside the major cities.
"must visits" is difficult without knowing where your understanding and interest lies? The happiness is difficult to plan a trip for. For historical context I might suggest the major cities, to understand how big they actually have been in historical times and then visiting the rural side of Denmark to understand how the last couple of millenia have been lived, where the basic cultural elements come from.
I often like recommending Frilandsmuseet - As a perspective on where we came from, alongside perhaps a few of the 800 year old churces and central museums.
I wouldn't worry a lot about the turban, even if you encounter a couple of drunk danes I have difficulty imagining that it would matter a lot.
