Because there isn't a market for them. Companies would love to sell you 8k displays, but the improvement in perceived quality is kind of marginal and apparently early adopters aren't buying them enough.

Why should you buy something that's not worth it? My sweet spot is 27' 1440p, maybe sometime in the future I'll switch to 4k but never 8k. I don't think my eyes will see anything above 4k at 27', i barely see the difference from 1440p to 4k. So yeah, you are right.
