I’m looking for something similar to NotePlan, which is a really intuitive plaintext notes-task-calendar app that’s native to the Mac ecosystem. I’m looking for a similar PC alternative, preferably self-hosted (although at this point I’d settle for a cloud native web app if I can use it on a darn PC lol).

Try Anytype. I've used Logseq for the last 2y, and switched to Anytype because it's open source, soon self-host-able, and a loot of other goodies are comming soon.
