Goaltender Stuart Skinner made 26 saves and played a key role in the shutout, despite being temporarily forced out of the game in the first period due to NHL concussion protocols. Skinner returned and stymied the Bruins, but he didn’t personally get awarded the shutout.

It's how it works. Since he was not the only goalie to play, he won't be awarded the shutout. Happened to Hoffer on the Blues also.

Here is a story about the game

TLDR; Skinner was not awarded the shutout because he was removed from the game in the first period due to concussion protocols. He did finish the game, but since he wasn't the only goalie, no shutout.

Maybe they get two shutouts. 0 goals x 2 goalies =

That's the bit that bugs me, Pickard literally didn't make a save. There was one oilers goalie who stopped pucks and he stopped all of them.
