Should I watch all 20 years of the original run or just begin with the new one which I think is been around for 15 years? What are the best episodes? I've seen only a handful of the old and New ones but I liked what Ive seen, just hoping for a guide to really get into it

Watch from the 2005 reboot onward, only go back further if you enjoy old shows. There are some background stuff, callbacks, and references that you will miss but they will fill you in at some point, so you don't actually miss anything. There are some plot points that will giveaway some aspect of the story if you watched the old stuff, but then you won't enjoy the reveal as much.

My favorite episode is a two parter, Series 2 episodes 8 and 9, The Impossible Planet and The Satan Pit. But who doesn't love series 3 episode 10, Blink.
