NixOS isn't the easiest to understand, especially if you're new to Linux. It's an amazing tool, but unless you have a real need for its features then I wouldn't recommend it simply due to the added layer of complexity it adds on top of every tool
If you just want something that works you'll want to stay away from a rolling release. When arch goes wrong you'll need to be able to recover from it, if you're new to Linux I really wouldn't recommend going down the arch route, you will end up bashing your head against the wall for days at some point
I've never used Nobaru but it's fedora based. The biggest distinction between distros is its package manager, everything on top of that is just a preconfigured default. If Nobaru is close enough to what you want then go with that, otherwise go with fedora and slowly build the environment that works for you
