Proxmox and LXCs vs Docker is just a question of your preferred platform. If you want flexibility and expandability then proxmox is better, if you just want a set and forget device for a specific static group of services, running debian with docker may make more sense to you.

Proxmox on the host, setup some apps in LXCs and some others inside docker. Pihole, tailscale, maybe home assistant if you have IoT devices

I don't believe ddr4/5 are available in 2gb sticks, so everything would be divisible by 4 - a mixture of 4/8/16gb dimms

I have tailscale running 24x7 on an s22 ultra. Haven't noticed any change in battery life at all.

Disabling magicdns is something you do in the tailscale admin portal
