You said it works great for a day or so whenever you set up something new - that's probably a good clue. What steps do you take only when setting up something new?
I would try rebooting various parts of your network one at a time to see if it resets the 'one day timer' and starts working well again. Once you narrow down what's giving out after a day, you can move forward with replacing or bypassing that thing.
I'm fond of wassail. It's usually made with cinnamon, but you could exclude it and it should turn out alright.
Elaborate on this? I was under the impression that enterprise often had way less anti-user shit you see with consumer hardware, as well as being much more reliable long-term.
