I should start doing this, I would like if possible to be the one that host my emails. Also, there is a website: https://european-alternatives.eu/ which can help regarding changing to European services instead of USA ones. However, not all of them are open sources. Regarding Signal there is also messaging app that use XMPP protocol that are worth considering (https://xmpp.org/).
