A possible theory is that they already have a bunch of stocks still in the warehouse, so sticking to that price point for now make sense because there is no way that its gonna move those units quickly out of the warehouse if its not.

Probably planned. Dave2D said (in the apple video I think?) companies released a tech first before a tech they expect to beat or match them, so that it looks better by comparison and they get the early buyers. So the people at Steam most likely thinks that Switch 2 is expected to at least match the OLED Steam Deck or even beat it.
