Lots of applications for this, mostly for digital artists and creators though. Reminds me of the Microsoft puck.

Seems like it could replace the media keys and volume knob of my keyboard and allow me to choose a more barebones one in the future

The Logitech Craft has it. Really loved the knob even though I only ever used it for volume.

you can buy these (search amazon for usb knob) and of course, you can buy much more complicated devices that also include knobs - like say loupedeck
