Hello! I was actually stuck on this for a while but turns out what worked for me wasn't all-the-icons (frustratingly), it was nerd font icons! So run nerd-icons-install-fonts :)

Run "Doom doctor" in the terminal, it wil tell you how to fix this error and also if you miss some other packages.

Doom switched to Nerd icons recently, it's nerd-icons-install-fonts
now.
