I have a bunch of cabbage going. Kale is always good, too.

I would like to try it, but I have no idea of what would grow (10degC to 16degC high humidity). Does anyone have any suggestions?

Beets! Their ideal germination temperature is around 16°C and mature plants can even tolerate frosts. Arugula and Kale are great cool weather crops too.
