Personally, I'm a huge fan of Hollow Knight, Ori and the (Blind Forest/Will of the Wisps), and Kingdom Hearts. Orchestral soundtracks are just something else...

Gitaroo Man (PS2) The whole soundtrack is burned in. Probably from failing/restarting each level repeatedly.

Dustforce seems to be old enough now it keeps getting forgotten, but it's some of the best Chillwave around and really got me into the genre. It's also the only OST I've been able to get non-gamers into.

The xenoblade series has some amazing soundtracks. I especially love the X soundtrack.

idk if this counts as an "OST" but the New Vegas soundtrack like changed my life lol. the vibes set by those choice cuts of big band/swing from the era just added a level of immersion and comfort I didn't even know existed.
