I just got my new MacBook (upgraded from an air 2018 to a pro). Second Mac, first time replacing one.

Should I do a Time Machine restore immediately? Or should I boot up and do updates then Time Machine restore?

Time machine preserves your settings/configuration, so TM first. It'll be like opening up your old one, but on the new hardware.
