I'm just a rando on the internet but I suspect you'll be just fine. KDE is much less memory intensive than it used to be and much of that reputation really had more to do with all the extras people would run (compiz etc..) Minecraft will work better if the server is on another machine but probably not enough better to make a big difference for you. Don't worry too much, it's pretty easy to switch window managers. Give it a try and see how it works!

Moving the server will help most when the world is generating new chunks. If you are doing lots of exploring, move it off, if you are just building and staying in one spot, it won't make as much difference.
