I just bought ringriderpølser and was wondering what animal the meat originates from as one of my friends doesnt eat pig. Thanks in advance!

Ringridderpølser are usually made with pork meat and pork fat.

You can probably find some Halal or vegan versions if you look around, but those would not be original ringridderpølser.

While you can get vegan/halal/chicken/beef/lamb sausages, getting a ringridder that is any of that is simply not possible, they do not exist.

If there's one thing that people from the south is militant about, it's their regional dishes, and making ringriddere with anything but pork probably wouldnt fly (even the fact that they call a ringridder 'grillmedister' in your link rustles some jimmies, as it's not the same).

The closest thing you'll get is a chicken based grillmedister from gråsten fjerkræ.
