Coolest thing may be that they harvest soft shoots, then stab them into to bottom of the the surrounding waters, and even if it all freezes over, they can go get their stores and have fresh shoots to eat, even in deep winter.
That's a super cool beaver fact, thank you for sharing. I love that they have fresh, tasty shoots to eat in wintertime.
