I know that the "F" series of cpu means that it does not have integrated graphics, but are there any other significant features that are lost too or no? I have a dedicated gpu for gaming already so I should not have anything to worry about I would think.

I'm comparing the 12700k to the kf model.

Like if I were to use any of the Nintendo gaming emulators I don't think they would be affected. But if I were to try to make a plex server using it, then that would be affected by not being able to use the encoding/decoding I would think.

If you have plans to use it for Plex, I would definitely get the iGPU version. I just swapped my 5800x for my nephew's 12600k mainly for iGPU support for Plex trans-coding.
