I don't think you can block whole instances, but you can block communities. Open the community on your local instance and click Block community at the top of the sidebar, just below the subscribe link.

It's not what you asked for but another option is to uncheck the box that allows not safe for work content in your profile
One thing to consider before doing so is that one would miss out on all NSFW content, not just porn.
For example, I just saw a post about someone putting dick-shaped stem caps on tires marked NSFW. There's a far cry between something like that and straight-up porn.
Personally, I see no problem with blocking communities as they pop up. We're currently seeing a huge influx of new users on Lemmy, hence the flood of porn communities, but eventually this will slow down. My only concern is that there may be a hard limit to how many communities one can block. Guess I'll find out :P

I think this is correct, but I'm not 100% certain...
To defederate from an entire instance, in this case lemmynsfw, click the triangle-looking icon (beneath top bar, towards the right side of the page) and then set Status to Off.
To block just one of the categories of lemmynsfw, on the right side, scroll down just a little to see Magazine, then click the "no" icon for block magazine.
The triangle-looking icon is for turning ALL federation off, not blocking an instance.
This probably works for kbin but OP is on lemmy.one
